Why classifying horticulture matters
Horticulture is not a single, uniform practice. A mango farmer in Maharashtra, a spinach grower in California, and a florist in Amsterdam are all horticulturists – but their crops, techniques, and markets are entirely different. Classification gives structure to this diversity. The USDA’s National Institute of Food and Agriculture defines horticulture as the branch of agriculture concerned with growing plants for food, medicinal purposes, and aesthetic gratification – and explicitly recognizes pomology, olericulture, and floriculture as its scientific sub-disciplines. This end-use framework is not just academic; it shapes agricultural policy, market segmentation, research priorities, and training programs globally.
Pomology: the science of fruits and nuts
The word pomology comes from the Latin pomum (fruit) and logos (study). Pomology is the branch of horticulture that deals with the cultivation of fruit plants – and is also referred to as fruit science or fruit culture. Its scope covers the entire life cycle of a fruit plant, from seed to harvest, not just the fruit itself.
What pomology covers
According to the USDA, pomology addresses both tree fruits – such as apples, peaches, and oranges – and small fruits like strawberries, blueberries, and raspberries. It also covers tree nuts. Pomologists work on improving fruit varieties, developing disease-resistant strains, and refining harvesting and storage techniques. The field also has a commercial dimension: marketing, transportation, and post-harvest handling of fruits all fall under what is sometimes called commercial pomology.
Fruit crops in pomology are diverse – they include berries, stone fruits such as peaches and plums, and hard-shelled nuts like cashews and peanuts. What unites them is that they are grown primarily for consumption as a snack or dessert, which is how horticulture distinguishes “fruits” from “vegetables” in practice. Interestingly, this distinction diverges from botanical classification – tomatoes, for instance, are botanically fruits but are treated as vegetables in horticulture. This culinary/commercial definition was even upheld legally: the U.S. Supreme Court unanimously established the horticultural definition of vegetables in the 1893 case of Nix v. Hedden.

Olericulture: the science of vegetable cultivation
The term olericulture derives from the Latin oleris (pot herb) and cultura (cultivation), meaning the cultivation of pot herbs. Britannica describes olericulture as dealing with herbaceous plants for the kitchen – a definition that spans carrots (edible root), asparagus (edible stem), lettuce (edible leaf), cauliflower (edible flower buds), tomatoes (edible fruit), and peas (edible seed). This makes olericulture extraordinarily broad: virtually every part of a plant can qualify as a vegetable depending on how it is used.
Scope of olericulture
Olericulture is defined as the commercial production of vegetable crops and herbs. Like pomology, it covers the plant’s full lifecycle – from seed production and transplanting through irrigation, pest control, and post-harvest handling. Vegetable crops are broadly grouped by which part of the plant is consumed: root crops (carrots, beets), bulb crops (onions, garlic), leafy vegetables (spinach, lettuce), legumes (peas, beans), fruit vegetables (tomatoes, capsicums), and cucurbits (cucumbers, pumpkins).
Olericulturists work on enhancing the quality, yield, and nutritional value of vegetables while also addressing pest management and developing superior varieties suited to diverse climates and soils. Research in olericulture is especially focused today on developing crops that are high-yielding, disease-resistant, and resilient to changing climate conditions – all critical for ensuring food security.
Olericulture and food security
Globally, vegetable crops are a cornerstone of food systems. India, for example, is one of the world’s largest vegetable producers, and innovations in olericulture have been central to that growth. The discipline is also ancient – managing soil, planting cycles, crop rotation, and harvesting has been practiced for millennia, long before it was formalized as a science.
Ornamental horticulture: growing plants for beauty
Not all plants are grown for food. Ornamental horticulture, as described by Britannica, consists of floriculture and landscape horticulture, each concerned with growing and marketing plants alongside related activities like flower arrangement and landscape design. The turf industry is also considered part of this branch. What defines this division is its purpose: plants are cultivated primarily for aesthetic, decorative, or environmental value rather than nutrition.
Floriculture: flowers and ornamental plants
Penn State Extension describes floriculture as the growing and marketing of flowers and ornamental plants, including cut flowers, annual and perennial flowers, flowering shrubs, and foliage plants. It encompasses flower arrangement and is largely considered a greenhouse industry, since much of the production occurs in controlled, temperate environments. Floriculture products include cut flowers and foliage, potted plants, bedding and garden plants, and propagation materials, all of which require careful post-harvest handling to maintain quality during transport to often distant markets.
The global floriculture market is substantial. In 2018, global floriculture production was estimated at $43.23 billion, with Europe holding the largest market share. Production has increasingly shifted from traditional centers like the Netherlands, the USA, and Japan to Latin American, African, and Asian countries where growing conditions are favorable and labor costs are lower.
Landscape horticulture: designing with plants
Ornamental horticulture and landscape gardening has grown into a major commercial activity over recent decades, particularly as a crop diversification option for small farmers. Landscape horticulture involves the cultivation, installation, and maintenance of plants to beautify a defined area – from private gardens to public parks, institutional campuses, and urban green spaces. It also includes arboriculture (cultivation of trees for aesthetic purposes), turf grass science, and interior-scaping (using plants to beautify indoor spaces like offices and malls).
Beyond beauty: environmental and social value
Ornamental horticulture comprises the production of cut flowers, potted plants, and cut foliage crops, and its economic significance extends well beyond aesthetics. Ornamental horticulture creates employment across nurseries, garden centers, landscape design and maintenance, and floristry. Urban green spaces have also been linked to mental well-being, air quality improvement, and biodiversity support – giving ornamental horticulture an increasingly important role in sustainable urban planning.
How the three divisions compare
The three branches of horticulture are unified by their focus on intensive plant cultivation but are distinguished by what the plant ultimately produces – food, nutrition, or beauty. Britannica summarizes this neatly: horticulture is divided into cultivation of plants for food (pomology and olericulture) and plants for ornament (floriculture and landscape horticulture). Pomology and olericulture serve nutritional and economic functions tied to food systems, while ornamental horticulture serves cultural, environmental, and commercial functions tied to aesthetics and well-being. This end-use classification is also practical for policy. The USDA’s definition of specialty crops – which includes fruits, vegetables, tree nuts, nursery crops, and floriculture – directly reflects these horticultural divisions and determines eligibility for federal support programs in the United States.

Recognizing the divisions within horticulture matters because it reveals how central plants are to human life – not just as food, but as sources of livelihoods, urban environments, and cultural expression. From the apple farmer to the vegetable grower to the landscape architect, each is practicing a form of horticulture shaped by the end-use of their crop. This diversity within a single field also illustrates a key principle in economic sociology: human needs are not limited to subsistence. Societies invest in beauty, in environment, and in meaning – and horticulture reflects all of that.
